You’ll score points with this healthy option at Sunday’s Super Bowl gathering—or anytime, really.
With the Super Bowl set for this weekend, you’re probably planning the usual menu of wings and pizza. Here’s an additional option that is healthier and gives a nod to our Jersey Fresh produce, namely sweet potatoes, tomatoes, garlic, onions, peppers, cilantro, and even Jersey beef, if you can get them.

Sweet Potato Tacos
15-minute prep / 10-minute cook time
• 2 medium Jersey Fresh sweet
potatoes
• 1 lb. grass-fed ground beef (we used Jersey Raised Beef from Norz Hill Farm)
• 1 cup Jersey Fresh onions, diced
• 3 cloves Jersey Fresh garlic, minced
• ½ cup tomato sauce
• 2 tsp. cumin
• 1 tsp. coriander
• 2 tsp. onion powder
• 1 tsp. smoked paprika
• 1.5 tsp. Kosher salt
• Black pepper, to taste
• 2 tbsp. olive oil, divided
• ½ cup beef broth (water can
be substituted)
• Cheddar cheese, shredded (we
used white, sharp cheddar)
For the salsa:
• 2 medium Jersey Fresh tomatoes, diced
• 1 small Jersey Fresh red onion, diced
• ½ Jersey Fresh green bell pepper, diced
• 1 tbsp. Jersey Fresh jalapeno, chopped
• ¼ cup Jersey Fresh cilantro, chopped
• Juice of 1 fresh lime
• 1 Jersey Fresh garlic clove, minced
• Salt and pepper, to taste
1. Combine all of the salsa ingredients in a medium-size bowl. Set aside.
2. Wash sweet potatoes and scrub thoroughly. Then, dry completely.
3. Using a fork, poke sweet potatoes all over and place on microwave-safe plate. Brush with 1 tbsp. olive oil and salt and pepper. Cook seven minutes, rotating halfway. Add one minute until fork-tender.
4. While the sweet potatoes are cooking, prepare the taco ground beef. In a skillet, add remaining olive oil over medium high heat and brown the ground beef until no longer pink.
5. Reduce the heat to medium and add onion and garlic. Sauté until onions are translucent.
6. Add all the spices and mix everything to combine.
7. Add the broth and tomato sauce. Reduce heat to low, and cook for 20 to 25 minutes, stirring occasionally.
8. To assemble, cut the sweet potatoes down the center lengthwise. Fill with taco meat and cheese. then top with salsa.
