Cranberry Bites

For the holidays, especially if you live in southern New Jersey, who can resist a great cranberry sauce recipe (see the first part of this recipe)? But don’t stop there. This cranberry crostini can be the star of your charcuterie board at holiday gatherings.

Jersey Fresh Cranberry Crostini

5-minute prep / 15-minute cook time

For the cranberry sauce:

• 12 oz. Jersey Fresh cranberries

• 1 cup sugar

• 1 cup orange juice

For the Crostini:

• 2 tbsp. olive oil

• 1 tbsp. Jersey Fresh honey

• 4 oz. Jersey Fresh goat cheese

• 4 oz. cream cheese

• 1 baguette, sliced into 1/2-inch pieces

• 1/2 cup homemade Jersey Fresh cranberry sauce

• 1/4 cup chopped pecans

• Jersey Fresh thyme for garnish

1. Dissolve sugar in orange juice in a medium saucepan over medium heat.

2. Stir in Jersey Fresh cranberries and cook until they start to pop, about eight to 10 minutes.

3. Remove from heat and place sauce in a bowl. It will thicken as it cools.

For the Cranberry Crostini:

1. Preheat oven to 375 degrees F. Arrange baguette slices on a baking sheet, brush with olive oil, and bake for eight to 10 minutes until golden and crisp. Let cool.

2. Mix goat cheese and cream cheese together. Evenly spread cheese mixture on each crostini.

3. Spoon a small amount of cranberry sauce over the cheese on each crostini.

4. Top and garnish each crostini. Sprinkle chopped pecans and thyme on to each crostini.
