Little Cravings

Recently, I found a great little Mexican restaurant right on Landis Avenue near the Boulevard serving antojitos, Spanish for “little cravings.” Fruta Mex has a small but diverse menu, ranging from fresh fruit waters, smoothies, tostadas, cerviche, Mexican Street corn, and best of all ice cream!

Irma let me sample the cajeta ice cream and the guava ice cream and I can only call them divine! Go for the tostadas, but don’t leave there without the ice cream.

I had an idea for a new summer pasta salad that goes great with grilled chicken, burgers, or ribs. Make it ahead of time for family and friends.

Street Corn Pasta Salad
2 ears of corn roasted on the grill, or sautéed in a pan, remove corn from cob and place in large bowl.
12 oz. cooked rotini pasta
6 oz. cotija cheese crumbled
3/4 cup mayonnaise
1 jalapeño, thinly diced, rib removed
1 lime juiced

Mix all ingredients in a large bowl, refrigerate for at least an hour. At time of service, sprinkle more cheese on top and garnish with lime wedges.
