Just Peachy

Peach Bourbon Upside-Down Cake

4 Jersey Fresh peaches, peeled and cut into 4 slices
1¾ cups butter, softened, divided (1/4 cup for brown sugar mixture, 1 ½ cups for cake batter)
2 cups packed light brown sugar, divided (1/2 cup for brown sugar mixture, 1 ½ cups for cake batter)
1 (8 oz) package cream cheese, softened
1 ½ cups sugar
6 large Jersey Fresh eggs
1 ½ tsp vanilla, divided (1 tsp for cake batter, ½ tsp for drizzle)
3 cups flour
½ tsp salt
½ cup peach bourbon, divided (¼ cup for cake batter, ¼ cup for drizzle)
1 cup powdered sugar
Non-stick cooking spray
1. Preheat the oven to 325°F. Grease bundt pan and set aside.
2. Melt ¼ cup of butter in a small saucepan over medium heat. Stir in ½ cup of brown sugar. Cook, whisking constantly until sugar is dissolved and combined, about one minute. Pour mixture into a the bundt pan.
3. Place peach slices in an even layer on top of the brown sugar mixture.
4. Beat the cream cheese and remaining 1 ½ cups butter in a mixer on medium until creamy, about 1 minute.
5. Add sugar and remaining 1½ cups of brown sugar, beating on medium until light and fluffy.
6. Add eggs, one at a time, beating just until yolk disappears.
7. Beat in 1 tsp of vanilla.
8. Sift together flour and salt.
9. Add flour and salt mixture to butter mixture alternating with the bourbon, beginning and ending with the flour mixture
10. Pour batter over peaches and level with a spatula.
11. Bake until toothpick comes out clean about 1 hour and 30 minutes.
12. Cool for 25 minutes on a wire rack.
13. Once cool enough to handle but still hot, remove cake from pan to rack and cool completely, about two hours.
14. In a small bowl, stir together the powdered sugar, ½ tsp of vanilla and 1-2 oz of bourbon a little at a time to reach your desired consistency.
15. Drizzle over the cake.
