A Recipe To Relish
As well as starring on its own, JerseyFresh corn is an essential ingredient in many main dishes, sides, and even as a garnish. This recipe allows you to make the relish ahead of time and then serve with some barbeque favorites, such as hot dogs and hamburgers.

Jersey Corn Relish
15 min. prep / 30 min. cook time
2 cups Jersey Fresh corn kernels (we cut kernels from three ears of white corn)
2 cups Jersey Fresh onion, chopped
2 cups Jersey Fresh cucumber, peeled, seeded, and chopped
2 cups grape tomatoes, chopped
1 large Jersey Fresh green pepper, chopped
1 cup sugar
1 cup cider vinegar
1½ tsp. celery seed
1½ tsp. mustard seed
1 tsp. salt
½ tsp. turmeric
1. In a large saucepan, add all of the ingredients, mix to combine.
2. Over high heat, bring to a boil.
3. Reduce heat and simmer, uncovered, for 20 to 30 minutes, or until thickened.
4. Let cool slightly, then pour into storage container(s); we used five pint-size Mason jars.
5. Store in the refrigerator.
