Super Bowl-Ready

Two recipes that are just perfect for game day—but will work for Galentine's/Valentine's Day festivities, too.

Let’s spice things up a little this month! I’m sharing two recipes that are easy to prepare and serve. One of my own personal favorite dishes, is Buffalo Chicken Dip; my mom is a huge fan, too! So, whether you’re whipping up something special for a loved one for Valentine’s, or serving up good eats for the Super Bowl, these two recipes are sure to add a little zing!

Buffalo Chicken Meatballs
1 1/2 lbs. ground chicken
1/3 cup shredded cheddar cheese
1/2 cup Italian Seasoned Breadcrumbs
1 large egg, beaten
1/3 cup buffalo sauce of choice
Sea salt, to taste
Ground black pepper, to taste
Ranch salad dressing, optional

Preheat oven to 400° F. In a large bowl, combine ground chicken, cheddar cheese, breadcrumbs, egg, buffalo sauce, salt and pepper, and mix gently just until ingredients are combined. Shape into two-inch balls. Place on a parchment paper-lined baking pan, and bake for 30 to 40 minutes, or until completely cooked through. Serve meatballs with a small bowl of additional buffalo sauce, and a small bowl of ranch dressing, if desired.

Crock Pot Buffalo Chicken Dip
2 (8 oz.) pkgs. cream cheese
3/4 -1 cup buffalo sauce (depending on desired spice level)
1 cup prepared ranch dressing
4 cups rotisserie chicken, cooked, skinned, and shredded
2 cups mild or sharp cheddar cheese (divided)

In a crock pot coated with olive oil, add cream cheese, buffalo sauce, ranch dressing, chicken, and half of the cheddar cheese; mix well. Add lid and cook on LOW for three to four hours, or HIGH for one to two hours. Top mixture with the remaining cheddar cheese, and let cook for 10 to 15 minutes, or until top layer of cheese is melted. Keep crock pot on warm up to four hours once fully cooked, so dip stays warm during serving. Serve with tortilla or corn chips.
