Salad ala Watermelon
As we transition from summer to fall, melons are abundant at Jersey farm markets. This Jersey Fresh recipe pairs watermelon with Jersey tomatoes in a nutritious salad.

Tomato and Watermelon Salad with Feta and Herbs
3 cups, about 3-4 Jersey Fresh Heirloom or Beefsteak tomatoes, cut into wedges
4 cups Jersey Fresh watermelon, diced
3 tbsp. extra virgin olive oil
½ tsp. kosher salt
1 tbsp. lime juice
¼ Jersey Fresh basil and mint, chiffonade
1 cup feta cheese, crumbled
Tajin spice, optional
1. On a large platter, place the tomato wedges, sprinkle with salt. Top with the cubes of watermelon and sprinkle again with salt.
2. Drizzle olive oil over both. Then squeeze the lime over both.
3. Top with the crumbled feta.
4. Sprinkle the herbs.
5. Serve and enjoy!
NOTE: You can make this in a large bowl, by adding the tomatoes, watermelon, olive oil, salt, lime juice and herbs, then gently tossing together and pouring onto a serving platter.
