Blueberry Treat

Blueberry Pie Bars

15 min. prep / 60-70 min. cook time

Crust and Topping:

1 1/2 cups all purpose flour

3/4 cups sugar

pinch of salt

1 1/2 sticks chilled butter, cubed

Filling:

2 large Jersey Fresh eggs

1 cup sugar

1/2 cup sour cream

1/3 cup all purpose flour

pinch of salt

3 cups Jersey Fresh blueberries

1. Preheat the oven to 350 degrees F.

2. Grease a 7×11 glass baking dish.

3. In a mixing bowl, combine flour, sugar, salt and cubed butter with an electric mixer until it forms a crumbly consistency.

4. Reserve 3/4 cup of the mixture for the topping. Press the remainder into the bottom of the baking dish.

5. Bake for 15 minutes or until golden brown. Remove from the oven and set aside while you make the filling.

6. Whisk the eggs in a large bowl. Add sugar, sour cream, flour and salt, mixing each completely before adding the next ingredient.

7. Gently stir in the blueberries.

8. Spread the mixture evenly over the crust and then sprinkle the reserved crust evenly over the filling.

9. Bake for 45 to 55 minutes or until the top is lightly browned.

10. Cool for one hour before serving.
